I had waited a long time to experience the cuisine of the Briar Rose in Breckenridge. I recently watched the restaurant transform from its former worn-out self into a beautiful inviting restaurant. Great care was taken to preserve the existing details of this old building.  Classic art work reflecting the time period now hang on newly papered walls and stiff white table cloths with sparkling glasses top each table. A very luxurious and cozy ambiance indeed.
 
Upon arrival we were greeted, promptly seated and attended to by their very knowledgeable staff. An extensive wine list was presented which included quartino’s – A quartino is a quarter of a liter or about 1/3 of a bottle. It allows for the wine by the bottle experience to be enjoyed and shared by the glass. Bottles are also available but we opted for a quartino of Talbot Diamond Estate Chardonnay and a quartino of Crios Malbec to share.
 
Traditional Chop House fare graced the menu with an ala Carte menu of classic  selections. For starters you will find oysters, sausages, escargot and other seafood selections. For the main course Certified USDA Choice All Natural Black Angus from Harris Ranch- sirloins, filet, porterhouse cut, rib eye and Certified USDA Prime All Natural Black Angus from Harris Ranch strip steaks; Lamb Chops, Pork, Sausages and Wild Game are all among the large selection on the menu. A wide variety of Family Styled Sides can be selected from to compliment the meal. One of my favorite things about the menu is their sauce selections. Nine different sauce selections are available for your meal. Classic Hollandaise, Brandy Green Peppercorn, Lingonberry Demi Glace and more can compliment your main dish or side.
For my order I could not resist the Certified USDA Prime All Natural Black Angus from Harris Ranch Strip Steak and Béarnaise sauce. My husband went for the Petite Filet and Wild Mushroom Demi. We both decided upon the steamed broccoli and whipped Yukon potatoes. Sounds like an ordinary meal… definitely not! My Strip Steak was rich and flavorful, grilled to perfection (love medium rare!). My husband too was impressed with the Petite Filet’s flavor, tenderness and presentation. The sides were more than adequate, enough to bring home and savor again later!
 
Throughout the meal we were assisted and checked upon often. Once done, plates were cleared and our wait staff swept away the mess we made on the table cloth with a crumber, something I have not seen in quite some time.  As a finale, we choose to share another classic and a personal favorite, Crème Brule. This treat was perfectly caramelized on top, warm and creamy on the inside.
I could not find a better chop house in any other town or city. So I will once again “Shout It from the Mountain Tops”! The Briar Rose is a top notch restaurant that I would be proud to recommend to anyone.

Kemosabe Sushi Bar, Frisco, Colorado

No longer a side kick to that famous masked man, Kemosabe now stands on his own. Kemosabe Sushi Bar that is. Since I had first heard about Bob Starekow creating his newest culinary epicenter I waited patiently, saliva in check. I had been a fan of Silverheel’s at the Ore House infamous Sushi Happy Hour for quite some time. I was always amazed at how tender and delicious all of his sushi was. I personally felt it was one of the best places for sushi in our mountain towns. Alas, you could only get it one night a week…Until Now!
My husband and I had the opportunity to get a night out from the kids to experience Kemosabe’s creations. Upon entering, my enthusiasm did not diminish. The ‘mountain metro’ styling of the restaurant was spectacular. Sleek and Earthy with a city-style not normally found in the area. The clearest HDTV sat centered above the bar. Beautiful images from Planet Earth were shown throughout the evening with great background music.
IMG_1582.JPGI felt ready to relax and dig in to the sushi I saw coming out from behind the bar. The restaurant was filled to capacity, which was interesting to see on a weeknight. Once we saw the menu we knew at once why. The traditional sushi picks were there but a lengthy list of house specialties not found elsewhere whetted our appetite. We started with Chili Garlic Edamame after we placed our initial sushi order. WOW! Loved it! A unique spin on the traditional salted soybean, it offered a great spicy bite that kept you wanting more. But then our sushi platter arrived. A work of art, it was so beautiful that you didn’t and then did want to sample every piece and roll we ordered. Crunchy Shrimp Roll - beautiful presentation, tender rice and flavorful shrimp, cucumber, red onion, burdock-root, topped with tempura crunchies. The Lone Ranger -     hamachi, habanero cream cheese and avocado - Hot it was!!!The menu advised: You had better be serious. No refunds! My husband is a chili pepper junky and he gave it the two thumbs up – I did not partake, I went for Mr. Perfect instead. Salmon, daikon, burdock root, cucumber topped with crab equaled delightful. The traditional California Roll was also ordered. Yes it’s basic, but a favorite of mine, and again it did not disappoint, it was over the top delicious.

Two special Tatami rooms are available for private parties and feature traditional shoes off dining while sitting at low tables on comfy pillows.  I have always been a fan of Mr. Starekow’s establishments. Whether it was up in Wilderness, serving up a wedding at A-Basin or Silverheel’s at the Ore House in Frisco this man knows what people like. I give Kemosabe Sushi Bar “The Big SHOUT from the Mountain Tops!”
